Why eggs are the exception

Real eggs are used deliberately and heavily — they are the technical foundation of this bakery. Whipped-egg structures like angel food, chiffon and meringue depend on real egg whites to hold their shape; there is no vegan substitute that does the same job, and gluten normally helps a batter hold together, so gluten-free baking without it takes real technique to get right. This is not a vegan bakery.
